All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. FOLLOWING NEED CLEANING: INTERIOR/EXTERIOR OF GARBAGE BINS, INTERIOR PANEL OF ICE MACHINE, EXTERIOR OF SINKS, INTERIOR OF FRYER-DUE TO FOOD/GREASE OR DIRT.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOORS UNDER BAR SINKS, BEHIND HEAVY EQUIPMENT IN DISHROOM & IN WALK-IN COOLER MUST BE FREE OF DEBRIS.
The walls and ceilings shall be in good repair and easily cleaned. WALLS WITH FOOD STAINS AROUND & UNDER 3-COMP SINK/ AROUND PREP TABLES/ AROUND GARBAGE BINS ; DUSTY FAN GUARDS OF COOLERS MUST BE MAINTAINED CLEAN. PEELING PAINT ON CEILING BY THE WALK-IN COOLER AREA MUST BE REMOVED/RE-SEALED.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. MISSING LIGHT SHIELD IN WALK-IN COOLER MUST BE REPLACED.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. LEAKING FAUCET AT 3-COMP SINK MUST BE FIXED. CLOGGED DRIP PAN OF SMALL COOLER AT COOK'S LINE MUST BE FIXED ALSO.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. ANY CLUTTER ABOVE THE WALK-IN COOLER & IN BASEMENT,MUST BE REMOVED/MINIMIZED, & UNUSED EQUIPMENT MUST BE REMOVED/ CLEANED/COVERED TO PREVENT PEST HARBORAGE.
