All hot food shall be stored at a temperature of 140F or higher. FOUND POTENTIALLY HAZARDOUS FOODS NOT MEETING PROPER TEMPERATURE ON THE HOT HOLDING DISPLAY WARMER. CHEESE, SAUSAGE, PEPPERONI, PAN PIZZA AT 90F, 100F, 120F. INSTRUCTED MANAGER THAT ALL HOT FOODS MUST MAINTAIN A TEMP OF 140F ON HOT HOLDING UNIT DURING DISPLAY.CITATION ISSUED CRITICAL. MANAGER DISCARDED THE SAID PRODUCTS WORTH $38.00 AND TOTAL 7 LBS.
The walls and ceilings shall be in good repair and easily cleaned. MUST CLEAN IN DETAIL THE LIGHT SHIELD AND THE HOOD WITH MINIMAL DUST AND GREASE ACCUMULATION AND MAINTAIN.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST PROVIDE LID/COVER FOR THE X2 GARBAGE CANS IN THE PREP AREA.

Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. ALLL CLEAN POTS AND PANS, MUST BE STORED UPSIDE DOWN/INVERTED TO PREVENT DUST ACCUMULATION.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST CLEAN IN DETAIL THE EXTERIOR AND INTERIOR BOTTOM OF THE WARMING CABINET AND MAINTAIN.
