FOUND THE FOLLOWING COOKED POTENTIALLY HAZARDOUS FOODS HELD AT IMPROPER TEMPERATURES BETWEEN 62.6 F AND 81.7 F- CHICKEN BUNS, SAUSAGE BUNS, BEAN BUNS AND HOT DOG BUNS. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. THE FOLLOWING NOT CLEAN- OBSERVED FOOD DEBRIS ON ALL SHELVES IN PREP AREA, WALK IN COOLER SHELVES AND EXTERIOR OF COOLERS/COOKING EQUIPMENT. MUST CLEAN AND MAINTAIN ALL UNCLEAN EQUIPMENT.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOOR TILES DAMAGED AROUND 3-COMPARTMENT SINK AND FOOD BUILD UP ON FLOOR UNDER AND AROUND ALL EQUIPMENT IN KITCHEN. MUST REPAIR/REGROUT ALL DAMAGED FLOOR TILES AND KEEP FLOOR CLEAN THROUGHOUT KITCHEN.

INSTRUCTED MANAGER ALL POTENTAILLY HAZARDOUS FOODS MUST BE HELD AT 40 F OR BELOW IF COLD, 140 F OR ABOVE IF HELD HOT OR MUST HAVE TIME/TEMPERATURE LOGS FOR ALL POTENTAILLY HAZARDOUS FOODS IN ROOM TEMPERATURE. ALL OUT OF TEMPERATURE POTENTAILLY HAZARDOUS FOODS VOLUNTARILY DISCARDED AT THIS TIME.
