All food should be properly protected from contamination during storage, preparation, display, service, and transportation. OBSERVED FOOD NOT PROTECTED DURING STORAGE INSIDE OF THE WALK-IN COOLER. OBSERVED EXPOSED SAUSAGE AND EGGS STORED ON TRAYS WITH WATER DRIPPING ONTO THE FOOD FROM THE CEILING OF THE WALK-IN COOLER. ALSO OBSERVED AN OPEN PACKAGE OF CHEESE THAT HAD WATER DRIPPING ONTO IT. MANAGEMENT STATED THAT THE WATER IS COMING IN FROM A LEAK IN THE ROOF. MANAGEMENT VOLUNTARILY DISCARDED 5# OF FOOD WORTH $40. MANAGEMENT INSTRUCTED TO REMOVE ALL FOOD FROM UNDERNEATH THE LEAK. SERIOUS VIOLATION 7-38-005A.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. THE INTERIOR OF THE YEAST/CREAM REFRIGERATOR IN THE REAR PREP AREA IS NO LONGER SMOOTH AND EASILY CLEANABLE. THE STEEL BOTTOM INSIDE OF THE COOLER IS IN DISREPAIR. MUST REPAIR OR REPLACE THE COOLER.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE FOOD STORAGE RACKS IN THE REAR STORAGE AREA AND THE INTERIOR OF THE NON-WORKING OVEN AND INTERIOR OF YEAST/CREAM REFRIGERATOR (WIRE RACKS AND FAN COVER).
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. OBSERVED STANDING WATER IN THE FRONT AND REAR PREP AREAS AND THE WALK-IN COOLER. MUST MAINTAIN THE FLOOR DRY IN ALL AREAS. DETAIL CLEAN FLOOR OF FRONT PREP AREA.
The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN OR REPLACE THE DIRTY AND STAINED CEILING TILES IN THE REAR AREA AROUND THE OVEN. REPAIR THE SOURCE OF THE WATER LEAK IN THE WALK-IN COOLER.
REPAIR THE LEAKING WATER VALVE BELOW THE DIPPER WELL AT THE NORTH SIDE ICE CREAM DISPLAY FREEZER.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. OBSERVED HUMAN WASTE (FECES) OUTSIDE OF THE ESTABLISHMENT BEHIND THE WALK-IN FREEZER. MUST CLEAN AND MAINTAIN THIS AREA.
NO ACCESS PROVIDED TO THE SECOND EMPLOYEE RESTROOM. MUST PROVIDE ACCESS UPON NEXT INSPECTION.

MISSING THERMOMETER INSIDE DAIRY REACH-IN COOLER LOCATED IN REAR FOOD STORAGE AREA. MUST PROVIDE.
MUST PROPERLY STORED WIPING CLOTHES IN A SANITIZING SOLUTION WHEN NOT IN USE.
MUST ELEVATE SOFT DRINKS INSIDE WALK-IN COOLER 6 INCHES OF FLOOR.
