All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. FAN COVERS INSIDE WALK-IN COOLERS NOT CLEAN, ALSO INSULATION LINES AROUND PIPES WITH DIRT BUILD-UP, INSTRUCTED TO CLEAN AND MAINTAIN.
The walls and ceilings shall be in good repair and easily cleaned. CEILING TILES ABOVE DISHMACHINE IN POOR REPAIR, INSTRUCTED TO REPLACE.
All food not stored in the original container shall be stored in properly labeled containers. MUST LABEL ALL BULK FOOD CONTAINERS IN BAKERY PREP AREA.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. LEAKY PIPE NOTED UNDER MAIN 3COMP SINK, INSTRUCTED TO REPAIR AND MAINTAIN.

All food shall be protected from contamination and the elements, and so shall all food equipment, containers, utensils, food contact surfaces and devices, and vehicles. OBSERVED FOOD HANDLER PLACING CLEAN CHOPPED LETTUCE TO BE REFRESHED WITH COLD WATER IN A 3 COMP SINK WITHOUT SANITIZING SINK SURFACES. INSTRUCTED TO PROPERLY SANITIZE SINK BEFORE USING FOR READY-TO-EAT FOODS. 10 LBS DISCARDED VALUED AT $10.00.
