Found Cooked Beef 3 lbs at 56.0 F, Chopped Beef 8 lbs at 56.1 F, Cooked chicken 10 lbs at 54.9 F and Cooked Pork 5 lbs at 58.2 F that was stored in prep cooler that was removed from cooler listed above. Instructed that potentially hazardous foods must maintain 40 F or below. Manager voluntarily denatured and discarded-value $175, 26 lbs. Critical citation issued 7-38-005(A).
