All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Bottom of prep tables, bread cart & some fan guards of soda coolers need cleaning, due to dust or debris.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Following need cleaning: floor drains in prep areas, mop sink basin, floors around grease trap. Must maintain.
The walls and ceilings shall be in good repair and easily cleaned. Some wall section around handsink & prep tables need cleaning due to dust/food stains.
Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens. ALL MOPS/BROOMS/DUST PANS MUST BE CLENAED/SANITIZED THEN HUNG DRY/INVERTED, AT END OF THE DAY-TO PREVENT PEST HARBORAGE.

OBSERVED 7-SMALL/FRUIT FLIES ON THE SHELVINGS ABOVE THE 3-COMP SINK; 5-ON CEILING & WALL AROUND THE ICE MACHINE; 3-INSIDE MOP SINK CLOSET. MUST CLEAN/SANITIZE AFFECTED AREAS.
