Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. DRAIN HANDLE UNDER MIDDLE COMPARTMENT AT 3 COMP SINK IN PREP AREA IS LEAKING. MUST REPAIR. ALSO REPAIR LEAKY FAUCET AT MOP SINK. MIDDLE SINK IN FIRST FLOOR MENS WASHROOM IS SLOW DRAINIG. MUST REPAIR.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST DETAIL CLEAN HOOD OVER COOKING EQUIPMENT AND REMOVE HEAVY GREASE BUILD UP.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST DETAIL CLEAN FLOORS IN PREP AREA UNDER 3 COMPARTMENT SINK AND BEHIND COOLERS AND COOKING EQUIPMENT. MUST REMOVE ALL FOOD DEBRIS.
Soiled and clean linens, coats, and aprons shall be properly stored. OBSERVED CLEAN AND SOILED APRONS AND OTHER LINEN IMPROPERLY STORE ON LEDGES AND SHELVING RACKS IN KITCHEN AND ON FLOORS IN STORAGE AREAS. MUST PROVIDE A SANITARY CONTAINER TO STORE ALL SOILED APRONS AND OTHER ITEMS AND ALSO STORE CLEAN APRONS AND OTHER LINEN IN A CLEAN AND SANITARY MANNER.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. OBSEVED EMPLOYEE BELONGINGS BEING STORED IN STORAGE AREAS AND IN PREP AREAS. MUST PROVIDE A DESIGNATED AREA TO PROPERLY STORE ALL EMPLOYEE BELONGINGS. MUST BETTER ORGANIZE ALL STORAGE AREAS BY REMOVING ALL UNNECESSARY ITEMS AND BETTER ORGANIZING REMAINING ITEMS. MUST STORE ALL ITEMS 6 INCHES OFF FLOOR.
