Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. LIGHTS MUST BE SHIELDED WITH END CAPS ABOVE 3 COMPARTMENT SINK IN THE BASEMENT.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INSTRUCTED TO CLEAN AND MAINTAIN INTERIOR SURFACES (BEHIND UPPER PANEL) OF ICE MACHINE.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED TO RESEAL UNSEALED FLOOR BASEBOARD IN BASEMENT BY STAIRCASE.

Facilities not maintaining proper temperature. Found prep cooler at improper temperature, internal temperature of cooler at 46.9 F. Instructed that coolers must maintain 40 F or below. Critical citation issued 7-38-005(A). 'Held for Inspection' tag placed on cooler.
Potentially hazardous foods does not meet temperature requirement during storage, preparation, display and service. Found cooked chicken 1 lb at 47.0 F, raw chicken 5 lbs at 49.9 F, 3 lbs of Chorizo at 51.6 F and 5 lbs of cooked beef at 47.4 F. Instructed manager that potentially hazarodus foods must maintain 40 F or below. Critical citation issued 7-38-005(A). Value $100,14 lbs. Manager voluntarily denatured and discarded.
Floor along wallbase and behind equipment not cleaned. Instructed to detail clean daily.
Exposed handsink installed next to three compartment sink. Instructed to install shield between both sinks.
Multi use utensils not properly stored. Instructed to invert utensils to prevent contamination before use.
