Instructed to have rack covered or store pastries in display cases to protect from possible customer contamination. Serious citation issued 7-38-005(a).
Dish washing facilities not maintained or operated. While running and draining water in middle of three compartment sink, water with food debris coming up left and right sides of sink. Instructed to detail clean drainline and grease trap to prevent inadequate disposal of waste water. Serious citation issued 7-38-030.
Ventilation not provided in toilet room. Instructed to repair exhaust fan. Donut fryer in rear not under ventilation or exhaust hood. Instructed to install exhaust hood or remove fryer. Backflow prevent on utility sink faucet and three compartment sink faucet not maintained. instructed to repair to prevent leak or replace faucet.
Hair restriants not provided for employees or food handlers in prep area. Instructed to provided proper hair restraints for all employees in food prep area.
Floor along wallbase and behind equipment not cleaned. Instructed to detail clean daily.

Instructed to have rack covered or store pastries in display cases to protect from possible customer contamination. Serious citation issued 7-38-005(a).
No Certified Food Manager on premises when potentially hazardous foods are being prepared-sliced deli meats for sandwiches at 40.5 F and milk and eggs used for pastries. Instructed that a certified food manager must be on premises during all hours of operation. Serious citation issued 7-38-012
Violation #24 now corrected.
