All utensils shall be thoroughly cleaned and sanitized after each usage. THE FOLLOWING NOT CLEAN, MUST CLEAN/SANITIZE; COOLERS, BOTTOM PANELS OF PREP TABLES, LARGE MIXER, STORAGE SHELVES INSIDE WALK IN COOLER, CARTS, CAN OPENER AND MOP SINK.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST REPLACE BROKEN AND MISSING FLOOR TILES THRU-OUT PREP AREA AND CLEAN FLOORS THRU-OUT PREMISES. ALSO MUST CLEAN/SANITIZE FLOOR DRAIN UNDER 3PART SINK.
