The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. THE FLOOR UNDER THE COOKING EQUIPMENT NOT CLEAN. INSTRUCTED TO CLEAN SAME. CLEAN THE FLOOR DRAINS SO NO INSECT HARBORAGE.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. THE VENTS IN THE TOILET ROOM AND PREP AREA NOT CLEAN NOT CLEAN HAS DUST AND DIRT BUILDUP. INSTRUCTED TO CLEAN SAME.
