INSTRUCTED MANAGER TO KEEP ALL HOT FOODS 140F OR HIGHER AND COLD FOODS 40F OR LOWER AND KEEP DAILY TIME AND TEMPERATURE LOGS AS I HAD EDUCATED ON WHEN CITED FOR THIS VIOLATION LAST INSPECTION. PRODUCT WAS DISCARDED WEIGHING 10LBS. VALUED AT $20.00. CITATION #64654-18
MUST DETAIL CLEAN INTERIOR OF ALL EQUIPMENTS AND COOLERS.
MUST DETAIL CLEAN FLOORS IN ALL CORNERS, REAR AND PREP UNDER/AROUND ALL HEAVY EQUIPMENTS.

All utensils shall be thoroughly cleaned and sanitized after each usage.NEED TO CLEAN AND SANITIZE ONION SLICER, POTATO CHOPPER, AND REAR PREP TABLES. CLEAN HOOD AND FILTERS
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. NEED TO RESEAL REAR TABLE BOTTOM STORAGE SHELF PAINT COMMING OFF.
The walls and ceilings shall be in good repair and easily cleaned. RESEAL WALL BEHIND THE 3 COMP. SINK ( REMOVE PAPER TAPE)
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. REPLACE BROKEN LIGHT SHIELD ABOVE ONION CUTTER, REPLACE BURNT OUT BULB FRONT HOOD, AND CLEAN ALL LIGHT SHIELDS THRU-OUT
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.OBSERVED COMPRESSOR DRAIN HOSE NOT PROPERLY CONNECTED TO DRAIN LINE (IN A BUCKET INSIDE COOLER) INSTRUCTED TO PROPERLY CONNECT TO OUTSIDE COOLER IN PROPER DRAIN NOT IN A BUCKET.

All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.EXTERIOR SURFACE OF ALL ARGE FOOD BINS -ONION,POTATOES NOT CLEAN.MUST DETAIL CLEAN ALL OF THEM.
The floors shall be constructed per code, be smooth RAIN AT and easily cleaned, and be kept clean and in good repair.FLOOR DRAIN AT 3-COMP SINK NOT CLEAN.MUST CLEAN/MAINTAIN.
