All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. HEAVY DUST BUILD-UP NOTED ON VENTILATION HOOD INTERIOR SURFACES, INSTRUCTED MGR TO CLEAN AND MAINTAIN.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. CLEAN CUTTING BOARDS STORED ON FLOOR, INSTRUCTED TO STORE ELEVATED OFF FLOOR BY AT LEAST 6 INCHES.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. KITCHEN'S FLOOR IN POOR REPAIR, MISSING GROUT THROUGH OUT KITCHEN FLOOR, FLOOR DRAINS FILLED WITH FOOD DEBRIS NEXT TO MAIN PREP LINE, INSTRUCTED MGR TO CLEAN AND MAINTAIN.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED PEELING PAINT INSIDE WALK-IN COOLER WALLS AND CEILING, INSTRUCTED MGR TO CLEAN AND MAINTAIN.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST PROVIDE A REFRIGERATION THERMOMETER TO ALL COOLERS KEPT IN THE WARMEST PART AND MONITORED.

Adequate and convenient hand washing facilities shall be provided for all employees. NO HAND SOAP PROVIDE AT ANY OF THE SINKS AT THE BAR PREP AREA WHERE FRESH ORANGE JUICE IS SQUEEZED, CONDIMENTS LIKE CHERRY AND OLIVES ARE HANDLED WITH BARE HANDS. INSTRUCTED TO PROVIDE HAND SOAP AT ALL TIMES AND ENFORCE HAND WASHING FOR EMPLOYEES.
