The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. MUST REPAIR SLOW DRAIN AT FRONT HAND SINK.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST DISCARD WORN AND BROKEN CUTTING BOARDS AND REPLACE.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST DETAIL CLEAN THE HOOD OVER COOKING EQUIPMENT.
The walls and ceilings shall be in good repair and easily cleaned. MUST REPAIR OPENING IN WALL UNDER REAR HAND SINK. MUST ALSO SCRAPE AND REPAINT CEILING IN WASHROOM AND REMOVE PEELING PAINT.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. MUST PROVIDE LIGHT SHEILDS OVER LIGHTS ABOVE REAR PREP AND DISH WASHING AREAS OR PROVIDE PROOF OF SHATTER PROOF BULBS.

FOUND EVIDENCE OF INSECTS ON SITE. FOUND APPROXIMATELY 10 SMALL FLIES RESTING ON WALLS NEXT TO THE SODA DISPENCER AND FLYING IN REAR PREP AREA. ALSO FOUND APPROXIMATELY 6 ROACHES CRAWILING ON WALLS IN FRONT PREP AREA BEHIND GARBAGE CAN AND BEHIND WHITE REACH IN FREEZER. MUST REMOVE INSECTS,SANITIZE AFFECTED AREAS AND HAVE PEST CONTROL COMPANY SERVICE AREAS. SERIOUS CITATION ISSUED 7-38-020.

FOUND APPROXIMATELY 12 LIVE SMALL FLIES RESTING ON WALLS NEXT TO THE SODA DISPENSER AND FLYING IN REAR PREP AREA AND WASHROOM. ALSO FOUND APPROXIMATELY 15-20 LIVE ROACHES ON SITE CRAWLING BEHIND REAR PREP TABLE, REACH IN COOLER AND FREEZER, UNDER STORAGE CRATE AND PREP TABLES, AND ALONG SIDE FRONT COUNTER. MUST PROVIDE AN ADDITIONAL SINK STOPPER AT THE 3 COMPARTMENT SINK. OBSERVED A DRAIN LINE LEAK UNDER THE RIGHT COMPARTMENT OF THE 3 COMPARTMENT SINK. MUST REPAIR THE LEAK.
