All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST CLEAN INTERIOR BOTTOM OF FRYERS TO REMOVE GREASE NOTED. MUST REMOVE DUST AND BUILD UP FROM HOODED CANOPY OVER COOKING EQUIPMENT.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. CLEAN AND MAINTAIN BLADE OF CAN OPENER AT PREP TABLE.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. SWEEP FLOOR IN STORAGE CLOSET. MOP FLOOR IN DRY STORAGE ROOM IN REAR OF KITCHEN WHERE STICKY.
The walls and ceilings shall be in good repair and easily cleaned. CLEAN INTERIORS OF LIGHT SHIELDS IN KITCHEN WHERE NEEDED AND CLEAN CEILING TILES IN KITCHEN WHERE NEEDED TO REMOVE STAINS.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. INTERNAL THERMOMETERS NEEDED FOR ALL COOLERS AND FREEZERS.
