Violation descriptions and comments

A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. No certified manager during food preparation, cooking and thawing chicken. The certified manager showed up at 3:30.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. The north kitchen prep cooler has damaged gaskets and the doors on top have been removed, repair doors and gaskets.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Clean and repair the floor next to the grill so grease does not gather around the pipe in the floor.

Store wiping cloths in sanitizing solution in between use.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. The soda gun holder has a dirty buildup which needs to be washed, rinsed and sanitized at this time.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. Remove the knives from the back of the chemical dispensers on the 3-comp sink wall.
