All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN ALL COOKING EQUIPMENT IN THE PREP AREA, FOOD STORAGE CONTAINERS, PREP TABLES, COUNTERTOPS, INTERIOR OF PREP COOLERS, MICROWAVE, GAS LINES BEHIND THE COOKING EQUIPMENT, WIRE RACKS ABOVE THE SINKS, STORAGE SHELVES.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. REPLACE THE MISSING FLOOR TILES IN THE BASEMENT. DETAIL CLEAN THE FLOOR OF THE PREP AREA.
The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN THE WALLS AND BASEBOARD OF THE PREP AREA.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST REPAINT THE GREASE TRAPS BELOW THE SINKS AND INTERIOR OF THE COOLER. REMOVE THE CARDBOARD FROM THE STORAGE RACKS IN THE WALK-IN FREEZER.
MUST PROVIDE 3 DRAIN STOPPERS AT THE 3 COMPARTMENT SINK.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. MUST ORGANIZE THE BASEMENT CLUTTER AND REMOVE ANY UNNECESSARY ARTICLES. STORE REMAINING ITEMS AT LEAST 6' OFF OF THE FLOOR.
All employees shall be required to use effective hair restraints to confine hair. HAIR RESTRAINTS ARE NEEDED FOR ALL EMPLOYEES IN THE KITCHEN.

MUST PROPERLY STORE WASH CLOTHS BETWEEN USE IN SANITZING SOLUTION AT ALL TIMES.
MUST PROPERLY STORE ALL FOOD NOT IN ORIGINAL CONTAINERS IN FOOD GRADE BAGS AT ALL TIMES (I.E., CHICKEN, CUT FRUIT)IN WALK-IN COOLER AND ICE BOX FREEZERS. AS WELL AS LABEL LARGE PLASTIC CONTAINERS HOLDING RICE, SUGAR AND PEANUTS IN THE REAR KITCHEN AREA.
MUST CLEAN EXTERIOR OF GREASE TRAP LID LOCATED NEXT TO THE DISH WASHING MACHINE. ALSO MUST REMOVE EXCESSIVE RUST BUILD UP AT SAME. MUST REMOVE EXCESS ICE BUILD UP AT ALL ICE BOX FREEZER IN THE REAR KITCHEN AREA.
MUST REMOVE DEAD INSECTS INSIDE LIGHTSHIELDS AT REAR KITCHEN AREA.
