All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. REMOVE OR ORGANIZE WOOD AND FENCING NEXT TO COMPACTOR IN REAR TO PREVENT PEST HARBORAGE.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. REPAIR LEAK FROM DISH WASHING MACHINE IN PREP AREA. REMOVE DARK SUBSTANCE UNDER COMPACTOR. DETERMINE SOURCE AND REPAIR COMPACTER IF NEEDED.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. PROVIDE THERMOMETERS FOR REFRIGERATORS IN PRE-K ROOMS 101 104.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. PROVIDE PROPER LABELS FOR SANITIZING BOTTLES IN PRE-K ROOM 101 104.
All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. INCREASE HOT WATER FLOW TIME IN HANDSINK USED BY KITCHEN STAFF AND IN 1ST FLOOR GIRLS WASHROOM. INCREASE FLOW TIME HERE AND THROUGHOUT PREMISES AS NEEDED TO ENSURE PROPER HAND WASHING. OBSERVED WINDOW OPENED IN DINING AND KITCHEN AREA.IF WINDOWS ARE OPENED A SCREEN MUST BE PROVIDED,WITH A TIGHT FITTING TO FRAME.
OBSERVED A GRAY DIRTY TAPE ON TOP THE OPENING OF THE WALL/EDGE OF UNUSED WINDOW IN THE KITCHEN,NORTH-EAST AREA), INSTRUCTED TO REMOVE TAPE AND PROPERLY SEAL WALL, SURFACE MUST BE SMOOTH,CLEANABLE,AND NON-ABSORBENT MATERIAL. SEAL WALL AROUND PIPE IN THE KITCHEN AT NORTH-EAST WALL. PROVIDE MISSING WALL TILES BEHIND THE FIRST STALL BEAM,SOUTH WALL AT SECOND FLOOR GIRL'S WASHROOM.
