MUST CLEAN IN DETAIL AND SANITIZE THE INTERIOR PANEL OF THE ICE MACHINE IN THE 2ND FLOOR BANQUET SERVING AREA AND 16TH FLOOR CLUB LEVEL. CLEAN ALL THE INTERIOR OF THE CABINETS BELOW THE BUFFET LINE.
MUST CLEAN IN DETAIL THE CEILING LIGHT SHIELD IN THE WAIT STATION AND MAINTAIN. WALLS BESIDE THE EXPOSED HAND SINK IN THE 2ND FLOOR BANQUET SERVING AREA NEEDS DETAIL CLEANING AND MAINTAIN.
MUST CLEAN IN DETAIL FLOOR UNDER THE WIRE RACKS INSIDE THE WALK IN COOLER WITH FOOD DEBRIS. ALL BOXES OF CHIP AND STOCKS MUST BE STORED 6' OFF THE FLOOR IN THE 16TH FLOOR CLUB LEVEL.

Reach in cooler shelving/racks in front prep area had peeling paint/rust, shall be repaired/sealed, caulk around prep table in front prep area in state of disrepair, shall be repaired/replaced.
Non food contact surfaces of walk in cooler shelving/racks not clean, need detailed cleaning, non food contact surfaces of ice machine not clean(1st floor), need cleaning(detailed), rear kitchen storage shelving/racks not clean need cleaning, non food contact surfaces storage cabinet shelving(16th floor)need cleaning.
Floors under heavy equipment, cooking equipment in kitchen prep area not clean, need detailed cleaning, floors throughout kitchen prep area, and along wallbase, had missing mortar, standing water, shall be repaired sealed, and re-grouted, to prevent standing water in kitchen prep areas (1st floor).floors in men's bathroom(1st floor need cleaning).
Ceiling tiles in kitchen prep areas that were damaged/stained, shall be replaced, ceiling tiles in kitchen prep areas not clean need detailed cleaning, ceiling tiles in receiving areas, cafeteria need cleaning, damaged ceiling tiles shall be replaced(bsmt).
Light shields in front prep area not clean need detailed cleaning, light shields in rear kitchen, rear storage areas, hallways, need cleaning.
Exhaust canopies not clean need cleaning in front prep area, rear kitchen prep areas, exhaust vents(ventilation) in walk in coolers, reach in cooler(1st floor) not clean need detailed cleaning, exhaust vents(ventilation) in prep areas(1st floor, and 16th floor).
Found/observed employees not washing their hands while changing gloves, handlind foods(beef, cutting vegetables), and preparing foods at time of inspection, citation issued.Mgmt. was instructed in proper procedures for hand washing while preparing, handling foods, including ready to eat foods.
Found observed front entrance door not rodent proofed, door had 1/4inch gap on middle of door, also found exit doors in boiler room not rodent proofed, doors had gaps ranging from 1/4 inch to 1/2 inch, Citation issued.
