The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. ALL SODAS /STOCK MUST BE STORED BY ELEVATING OFF THE FLOOR (IN REAR STORAGE ROOM & IN WALK-IN COOLER).
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. ALL SODA CRATES USED FOR SODA STORAGE RACKS MUST BE REPLACED WITH REGULAR 4-LEGGED RACKS, FOR EASY CLEANING/PEST MONITORING.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INTERIOR FLOOR, SHELVES & LEDGES OF SMALL COOLERS AT REAR PREP AREA MUST BE FREE OF FOOD DEBRIS/SPILLS.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. CLEAN KNIVES MUST BE STORED IN A CLEAN/DRY PLACE OR KNIFE RACK (NOT BETWEEN EQUIPMENT).

All food not stored in the original container shall be stored in properly labeled containers. Open food products and sanitizing bottles need to be labeled and dated.

MUST CLEAN AND SANITIZE ALL INTERIOR FLOORS, SHELVES & LEDGES OF ALL COOLERS AND REFRIGERATORS AT REAR PREP AREA TO REMOVE ALL FOOD DEBRIS/SPILLS.MUST ALSO RESAND OR REPLACE WORN CUTTING BOARD WITH DARK GROOVES AND MARKS NEXT TO THE PIZZA PREP AREA.
MUST CLEAN FLOOR IN WALK-IN COOLER AT CORNERS TO REMOVE GRIME AND FOOD DEBRIS.
