All food not stored in the original container shall be stored in properly labeled containers.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST REPLACE BROKEN RUBBER GASKETS FOR STAND UP COOLER DOORS.

WAS 46F FROM THE OUTSIDE THERMOMETER ON THE COOLER, 48F BY THE MANAGER'S THERMOMETER AND 48.3 BY MY THERMOMETER. *A THICK ICE BUILD UP WAS ON THE INNER VENT. INSTRUCTED TO HAVE UNIT SERVICED/CLEANED SO THAT IT MAINTAINS THE PROPER TEMPERATURE OF 40F OR LOWER. UNIT WAS TAGGED, MUST FAX A LETTER TO 312-746-4240 REQUESTING A REINSPECTION OF THE UNIT.
