INSTRUCTED TO INVERT ALL CLEAN UTENSILS AND SINGLE SERVICE ARTICLES ON SHELVING UNITS AND ON COUNTERS THROUGHOUT AT ALL TIMES.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. INSTRUCTED TO PROVIDE SPLASH GUARD PROTECTION ON EXPOSE HAND WASH SINKS AT FRONT AND REAR PREP AREAS ON FOOD AND CLEAN UTENSILS STORAGE SIDES.ALSO MUST REDUCE THE LENGTH OF CHEMICAL & DETERGENT DISPENSER HOSE ON 3COMP.SINK.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INSTRUCTED TO CLEAN DEBRIS OR STAINS ON TOILET BOWL,VENT IN TOILET,AND ON 3COMP.SINK.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRCTED TO ELEVATE CLEAN FOOD UTENSILS AND PRODCUTS 6' OFF FLOORS AT ALL TIMES.ALSO CLEAN DEBRIS ON FLOORS UNDER STORAGE SHELVES.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. INSTRUCTED TO REPAIR SLOW DRAINING ON EXPOSE HAND WASH SINKS AT REAR AND FRONT PREPS.

OBSERVED FOOD DEBRIS/DUST ON SHELVES BEHIND FRONT SERVICE SANDWICH STATION. MUST CLEAN ALL SHELVES AND CLEAN INTERIOR OF ALL CABINETS AT SAME.
OBSERVED FOOD/DIRT BUILD UP INSIDE FLOOR DRAINS. MUST CLEAN INTERIOR OF FLOOR DRAINS AND MAINTAIN.
OBSERVED FOOD STAINS ON WALL BEHIND PREP TABLE ADJACENT TO 3-COMPARTMENT SINK. MUST CLEAN WALL AND MAINTAIN.
