All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE GRILL, STOVE, VENTILATION HOOD AND FILTERS, INTERIOR OF THE ICE MACHINE.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. DETAIL CLEAN THE FLOOR OF THE PREP AREA. REGROUT THE FLOOR TILES BEHIND THE BAR.
The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN THE WALL BEHIND THE COOKING EQUIPMENT AND THE BASEBOARD IN THE PREP AREA.
MUST INSTALL DRAIN LINE TUBING CONNECTED TO THE SODA GUN HOLDERS BEHIND THE BAR.
Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. NO CHLORINE SANITIZING RINSE WAS OBSERVED AT THE LOW TEMP. DISHMACHINE. DISHMACHINE WAS NOT IS USE AT TIME OF THE INSPECTION. UNIT TAGGED BY CDPH. MANAGEMENT INSTRUCTED TO HAVE UNIT REPAIRED AND SANITIZING AT 100PPM. NO CITATION ISSUED. FAX REINSPECTION LETTER TO (312) 746-4240. CRITICAL VIOLATION 7-38-030.

Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. OBSERVED PIZZA OVEN IN KITCHEN(8.2KW)NOT UNDER THE VENTILATION,INSTRUCTED TO PROVIDE VENTILATION, REMOVE UNIT OR PROVIDE A UNIT THAT IS A 7.5KW,WHICH NO VENTILATION IS NEEDED.

The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.SWEEP FLOOR IN BASEMENT AREA, AND SPRINKLER ROOM,ALSO ELEVATE ITEMS NEEDED 6' OFF THE FLOOR UNDER AND SIDE OF THE STAIRCASE THAT GOES IN BASEMENT (NORTH STAIRCASE).
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. REPLACE BROKEN LIGHT SHIELD IN KITCHEN, ABOVE THE PREP AREA, ALSO REPAIR THE FRAME OF SAME LIGHT.
