All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. OBSERVED FIFTY OR MORE FRUIT FLIES ON PREMISES IN THE DISHWASHING AREA ON THE WALL, ABOVE THE BEVERAGE STATION ON THE WALL, UNDER THE BEVERAGE STATION AROUND THE DRAIN AND ON THE WALL IN THE DELI AREA. MUST SERVICE ALL FLOOR DRAINS AND CLEAN WALLS WHERE ACTIVITY NOTED. RECOMMENDED TO HAVE ECOLAB SERVICE ESTABLISHMENT AND FLOOR DRAINS PRIOR TO REINSPECTION AND TO FOLLOW-UP WITHIN A COUPLE OF DAYS. All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST REPAIR LOOSE RUBBER GASKETS AT REACH-IN COOLER DOORS IN PIZZA/PASTA AREA AND GLOBAL AREA---(CDI). MUST CLEAN INTERIOR OF ICE MACHINE TO REMOVE RUST OBSERVED. MUST CLEAN AREAS AROUND SODA NOZZLES AND JUICE NOZZLES AT BEVERAGE STATIONS TO REMOVE STICKY RESIDUE OBSERVED. ALSO CLEAN ICE DISPENSERS AT BEVERAGE STATIONS TO REMOVE BUILD-UP FROM MOISTURE. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN THE FOLLOWING EQUIPMENT AND MAINTAIN IN BOTH KITCHENS: EXTERIOR OF ALL COOKING EQUIPMENT (FRYERS, GRILLS, OVENS ETC). INTERIOR BOTTOMS OF FRYERS TO REMOVE GREASE. VENTS ABOVE COOKING EQUIPMENT TO REMOVE DUST AND GREASE. ALSO CLEAN INTERIORS OF ALL HOT HOLDING CABINETS AND REACH-IN COOLERS.
