  • VIOLATION OF SECTION 3-305.11 Food is not stored to prevent contamination, specifically: Observed sacks and boxes of potatoes on the floor in the rear storage room. Also, noted some foods in the walk-in uncovered. REQUIRED CORRECTION: Food shall be protected from contamination by being stored: 1) in a clean, dry location; 2) where it is not exposed to splash, dust or other contamination; or 3) at least 6 inches above the floor.
  • VIOLATION OF SECTION 3-501.16 *CRITICAL* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: Cooked potatoes in steam warm-holding table at 122° towards the top of the bin (140-150° at the bottom of the bin) less than 2 hours. Also, temperature of the chefs prep cooler closest to the dish washing machine was at 42° and some raw beef inside was at 43°. Adjust cooling unit so that all foods inside are maintained at or below 41° F.
