DURING THE INSPECTION EMPLOYEE IN CHARGE OF PREPARING THE SUSHI DEMOSTRATED THE ACIDIFICATION PROCESS AND A DISCUSSION ON THE PROPER METHODS OF MEASURING AND MONITORING THE pH LEVEL OF THE ACIDIFIED RICE. DISCUSSED CREATING A TRAINING SOP TO TRAIN THE STAFF WITH THE MANAGER AND LINE CHEF. REVIEWED THE SHELLFISH TAGS WHICH ARE KEPT IN CHRONOLOGICAL ORDER.
