Chicken was 125�°F, and pork was 126�°F in the steam table.
Spinach leaves were 53�°F in the containers above the cookline.
The hood caulking along the wall at the end of the cookline was cracked. The caulking on the dish machine drainboard was cracked.
The interior of the standing reach-in refrigerator was soiled with debris.
Plates and dishes were stored on the rack next to the trash can and were not protected from contamination in the front preparation area.
