    A collander of cooked greens was sitting in the rinsing compartment of the 3 compartment sink. No food can be stored or prepared there. The 3 compartment sink is for the dish and utensil washing only. All food prep must be done at the approved food preparation sinks.

    Cleaning is needed on all table bottoms throughout.

    General Comment - Recommend keeping single service containers in the original packaging until it is needed in order to better protect them.
  • Proper hot holding temperatures
    Several trays of chicken and potato wedges were sitting on the counter at 120-125 degrees. It was being prepared to go into the hot holding case. All hot food must be held at 135 degrees or above at all times. All items were immediately discarded by the manager.

    Cleaning is needed on the door tracks of the service case, clean the table frames of the bread cutting table and detail cleaning needed on the table bottoms and shelves.
  • Food contact surfaces cleaned & sanitized; approved methods and sanitizers
    One of the slicers was not properly cleaned today. Be sure to remove all food debris and residue from slicers when cleaning. / The spray bottle of quaternary ammonia sanitizer showed less then 200 ppm today. Replace sanitizer in spray bottles on a routine basis.
  • Garbage properly handled & disposed; containers properly maintained
    The doors were open on both of the dumpsters today. Dumpster doors must remain closed at all times when not in use.

    There was a cake sitting on top of the raw chicken in the walk-in cooler when I arrived today. Pre-cooked and ready to eat foods must be stored separately from raw meats to prevent cross contamination. Also, recommend keeping the boxes of dressings on a separate shelf from the raw chicken.
