- Critical - Observed bare hand contact of ready-to-eat food by employees and establishment has no approved Alternative Operating Procedure in effect. Observed employee touching ready to eat cupcakes just taken out from the oven. Cupcakes touched several times in the surface to try to understand their temperature. Also, single-service articles - paper cups for the cupcakes - touched with bare hands. Paper cups placed in the preparation area to put inside the ready-to-eat cupcakes.

Observed employee touching cupcakes ready-to-eat without gloves. Cupcakes just taken out from oven, and touched several times in the surface to see if they were still hot or at a right low temperature sufficient to be placed the reach in cooler in or freezer. Repeat Violation.
