SEA is a pretty diverse region. I'd say Thailand best represents the region, and has the most tourists. It's probably the country most people think of when 'South-East Asia' is mentioned.
Malaysia's tourism numbers are extremely skewed from back and forth trips from Singapore. The southern tip of Malaysia is directly connected to Singapore and that portion of Malaysia basically serves as suburbs/weekend trips/reverse commutes/cheap shopping for Singaporeans. They're doing this by number of entries which is why you have some crazy numbers for Singapore where Singapore contributes 13+ million visitors (more than half the total visit numbers that Malaysia's tourism board puts out) despite the country of Singapore having about 5 million people. I feel Thailand is much more of a tourism destination as people are actually coming all over in large numbers to Thailand for visits while Malaysia's larger visitor numbers are more an interesting technical quirk.

seems like the SEA countries with the highest number of ethnic Chinese usually do the best
when the Chinese left Vietnam it seemed to get worse, seems like where ever the Chinese go the business booms
Vietnam is improving now. It reached a nadir after the war, but has improved since economic liberalisation in the 90s like China. The Vietnamese are culturally more like the Chinese than other SE Asians and are very businesslike.

Maybe 30.000 people work in Malaysia but live in Singapore.

This is true. Thailand has a more balanced range of countries, and they come from all over the world.
None really is as influential as South Korea and Japan.
But if you are talking about cuisines, must be the Thai cuisine.
Followed by the Vietnamese cuisine.
There are more overseas Filipinos and Indonesians than overseas Thai, but Thai cuisine is still much more popular outside of Southeast Asia.
Thailand is able to attract more intercontinental tourists than other southeast Asian countries, Singapore and Malaysia followed. Because of the many intercontinental flights to and from Bangkok, Singapore and kl. These are popular stopovers between Europe and Australia & NZ.
Singapore leads in modernisation in Southeast Asia.
