Heading down to Austin tomorrow. Anyone with any authentic Texas chili left over, please invite me over and I'll help you finish it off. Oh, and I made a big pot of pinto beans last night, and will bring the leftovers for you to add to your chili if you like. Personally, I prefer NO BEANS with my chili. And kidney beans (blech) never pass my lips, period.

Red beans and rice are made with kidney beans. Once you taste them, you won't think the same thing about kidney beans...

Camellia brand, cooked all day, with a nice piece of andouille added at the end, and some good crusty Leidenheimer's bread (or Gambino's, since that's available here in Austin) - and you're right. A dish to rival chili in its simple goodness.

How do you know you're a yat? Because you know what you had last Monday, and the Monday before that, and the Monday before that ...

It's freezing up here too. The cat and I are huddled before the electric fire.

I've got a pot of black beans seasoned with onion, garlic, and bacon going, to be eaten with tortillas later.

They are? Every recipe I've ever seen for red beans and rice (and those I've made myself) calls for small red beans, which is not the same thing as kidney beans. Every dish of red beans and rice that I had in NOLA was made with small red beans.

But I suppose they are interchangeable to some, and some people do make it with kidney beans. The last time I tried to gag down red kidney beans was in three-bean salad--just iiiiiiiiiickkky.

I think you were fooled by the color. Camellia brand - THE standard in New Orleans - are shaped like kidney beans, but are the light color of small red beans. Not the dark red of three bean salad kidney beans.

Most New Orleanians I know wouldn't eat at a place that didn't serve them. Available at HEB.

I do like red beans and rice, except when they are made with kidney beans (blech). I make my beans and rice with pinto beans (sacrilege I know, but hey I'm not from Louisiana!).
