3 year old car, mint condition, under 40k miles... I expect to pay 50% of the new price, max 60% for certain brands like Lexus. In reality i see many listings at 75% asking which is ludicrous.

Agreed! Knowing if you were the owner of that same 3 year old car and wanted to sell it back to the dealership, they'd probably offer you 30% of the new car price.

It's listing price and should be negotiated. 75% is a bit much but would you sell your 3 years old mint condition car for less than 50% of a new price?
Getting beyond the wisdom of the OP's purchase, I have been doing some research for my wife, who may be in the market for a new Subaru. The results don't make buying used look particularly attractive, so I'll share what I found on cars.com.
Lowest price new Impreza with automatic transmission within 100 miles: $19,965
Lowest price used Impreza under 10,000 miles: $18,990
Lowest price used Impreza under 20,000 miles: $16,265.
Obviously these are before any negotiations, not OTD pricing, and we could go to higher miles because Subarus run for a long time, but I'm not seeing much of a savings for taking a used car (or much of a premium for buying new, if you want to look at it that way).

I think buying used really is important when you're looking at vehicles that come with a tremendously high price tag brand new. For instance, I see some Chevy Silverados that are in the $50k range (even some $60k) brand new. The same truck three or four years older is half price.
IMO Volvo or VW? Suicide either way, kill me now..........
I think they are both have some of the safest cars to drive, so not sure what your getting at. I know VW is usually ahead of the competition in that area. They were putting full curtain side and pillar airbags while many domestics still had just front bags and half side bags.
Unfortunately your opinion isn't based on any sort of reality or facts. Both are very safe cars, and there are plenty of reports and ratings to back that up.

Exactly, you have to go very used like I did (10 year old car) to spend half what a new equivalent car (not the same car necessarily) costs.
Had I bought a Golf wagon I'd have spent twice as much but gotten literally twice the gas mileage, similar or better safety, better NVH, and features that didn't exist back then
