The reason weather is important is the formation of ice in the pitot tubes on the front nose of the A-320, this would block the holes that are used to calculate the speed of the plane. If the plane goes too slow it stalls and falls to the Earth, if it goes too fast it will break the structure of the aircraft. When the pitot tubes form ice and disrupt the speed reading the autopilot does not work, meaning it is up to the pilot to fly the aircraft essentially not knowing the correct speed of the plane. If the pilot operates the aircraft too slow it stalls and crashes, if he goes too fast he will rupture the aircraft's structural integrity.
