Because it is the correct spiritual interpretation of the OT prophesies . . . NOT the worldly expectations of the Jews. As is all too typical, they interpreted the OT according to their ancient ignorance and had carnal expectations of a worldly King . . . NOT a spiritual one.

Mainstream Christians think they know scripture but they do not since they fail to keep the words of the son of man and live in the light of the God of Israel.
They believe that the Jews are to be grafted into the Christian church when it is actually the other way around...

Genuine worshipers shall worship the Father in spirit and in truth for it is just such worshipers the Father wishes for God is spirit and those who worship Him must worship Him in spirit and in truth.

How can anyone believe that Christianity is an offshoot of Judaism...

They do not believe in Him. If they did they would follow Him and do the works He did, the works of the God of Israel.
