This was all said because it was a given that Gentiles converted to Judaism, in fact, the council was formed to decide if Gentile converts had to follow all the laws, traditions and rituals of Jews, and concerning all the dietary laws.(THAT JEWISH BELIEVERS NEVER STOPPED KEEPING)
The council was formed to see if Gentile converts had to keep all the laws of Judaism JUST LIKE JEWISH BELIEVERS.
It was a given that the Gentile already shared the same worship system as Paul and all the Jewish believers who never stopped keeping the laws.
It was a given that the Gentile was a convet to Judaism, and a given that the Gentile was not born a Jew, and shouldn't be crushed into trying to change his entire culture and heritage. It is Jewish culture and heritage.
The sheer amount of holy days, traditions and rituals of a Jew would overwhelm any Gentile who tried and this is a lot of extra biblical holy days and traditions at times, but a WHOLE BUNCH of culture, traditions and rituals the Gentile would be overwhelmed with.
