G-d sets the sacrificial system in place and then turns around later and claims that He never wanted it...Is G-d a liar?...
No. The men who set the sacrificial system in place are the ones responsible for misrepresenting what God wanted. Let's face it, After being told to save the animals from extinction, Noah sacrificed them and irritated God by the imagination of his evil nature.
20And Noah builded an altar unto the LORD; and took of every clean beast, and of every clean fowl, and offered burnt offerings on the altar.
21And the LORD smelled a sweet savour; and the LORD said in his heart, I will not again curse the ground any more for man's sake; for the imagination of man's heart is evil from his youth; neither will I again smite any more every thing living, as I have done.

You can't apply this to that....Besides, Let's go back to Cain and Abel...

Mystic,
Noah didn't sacrifice all the clean animals.
It's about the sabbath.
All the clean were numbered in 7s.
And if had just read read what I said about the birds.
Then there may be some hidden treasure. On one hand 5 offerings.
Bull?
Goat?
Ram?
Dove. male and female.

That assumes that the book is not lying about who set up the system, God or man. Oh, Mystic already pointed this out. Well, it's part of what you trust as authority, a self-contradictory book which clearly delineates development of thought about God from primitive to very advanced, or the Spirit of that "advanced" thought.
Voluntary humility.
The Lord spoke of Love and the royal Law.
3s over 2s, I've repeated this before.
Cool site, thanks for posting. Like his chart. Five offerings, five gifts/PORTIONS of our inheritance of the nature of the works the Spirit does = Apostle, Prophet, Evangelist, Shepherd, Teacher, the "fingers" of the hand of the Lord. Also five ingredients (4 plus salt) to the Holy apothecary, ground together offer up a sweet smell unto the Lord, which is what happens on the rare occasion that all 5 consecrated lives come together in sacrifice. Peace
11 Of what use are your many sacrifices to Me? says the Lord. I am sated with the burnt-offerings of rams and the fat of fattened cattle; and the blood of bulls and sheep and hegoats I do not want.
Many claim that G-d said that He did not desire sacrifice, then how is the bolded above explained away?...
I believe it's also important that there is a distinction between ordinance and Law.
But we are under grace and truth. But that does not let one get away with murder, or taking an eye out, or hurting their neighbor.
If righteous atonement never happens to the one who is offended, God will enter; there can never be a law of life is giving to one but takes life away from another.
This is as far as humanity goes, so what will gather.
The Book of Hebrews is written to those who believed blood sacrifice was something, while it states that the blood sacrifice of animals was useless. (Hebrews 7:18)
Hebrews 10:
5 Therefore, when Christ came into the world, he said: “Sacrifice and offering you did not desire, but a body you prepared for me;
6 with burnt offerings and sin offerings you were not pleased.
7 Then I said, ‘Here I am—it is written about me in the scroll— I have come to do your will, my God.’ ”
8 First he said, “Sacrifices and offerings, burnt offerings and sin offerings you did not desire, nor were you pleased with them”—though they were offered in accordance with the law.
