If you're into biking and beer, Minneapolis and Des Moines are fantastic options to merge the two. Both have awesome beer scenes, and are a super bike friendly. Minneapolis has more urban amenities, but Des Moines punches above it's weight class.
Kansas City and St Louis are always fun. KC has a great food scene, St Louis the better beer scene. Both have great architecture.
Duluth is the best gateway to outdoor adventure.
Madison is generally a great time as well. The state capitol/college town mix is always interesting.
Grand Rapids, Cincinnati, Cleveland, Milwaukee, St Louis, MPLS/St Paul are the most interesting cities to visit imo. I'd take all of them over Chicago to be perfectly honest. Visiting any big city is all kinda more or less the same.
Per capita at least, Springfield with all the Abe Lincoln sites.
We took a class trip there in eighth grade, but I'd like to visit again at some point as an adult now that I actually enjoy history and don't just see it as an obstacle to getting good grades so my parents don't take my GameCube away.
For me I spend so much time in Chicago it's lost it's shiny "big cityness" to me. I love the city and I have no problem going there, it just wouldn't be my first choice anymore.

I'm a Grand Rapids homer so it doesn't make sense to put it on my list since I wouldn't be a tourist. I do think it's a dark horse in this since so many people on City-Data know nothing about it. It's close proximity as the anchor to the higher end beach cities on Lake Michigan already give the area a higher profile for tourism. The city has more higher rated hotels than most cities it's size. It's local culture and food scene can will keep people busy for a day or two. It arguably has the best beer scene in the Midwest. If you're a person who bases a good time on brewery hopping and beer consumption it should be on your list.
Traverse City is another great/beautiful place. I also really enjoy Madison.
