Because if you dig a hole and drop the body in to decompose naturally, any medications that person would be taking could be leached into the soil and ground water.
By doing a hot decompose, you're basically "sterilizing" those medications. I'm sure there's another word for it, but I just can't think of it now.
It's the same thing with horse manure. In a pasture of horses, manure stays on top of the ground and breaks down slowly and leaching into the ground, including any dewormers the horses have been given. If you use any of that manure for a worm farm, the worms will all die. Collect that manure and get it into a hot compost, and you can kill the dewomers and use it for your garden without worrying about killing earthworms.

those don't exactly break down very fast.
Human body turned to compost in three to seven weeks? I don't think so.
