I agree with most of your comments except the HWC. It does not contain many carbs (.4g per tablespoon). It is akin to butter and in fact you can make your own butter by whipping it) I love it in my coffee. Yes coconut and olive oil would be the best for cooking although the olive oil may not be taste appropriate for all dishes. I have not used coconut oil yet but I understand the taste is neutral? Avocado oil is another one that is supposedly good (I have not tried) but have seen that it is more $.

Hi gguerra,

Yes, you are correct that HWC is quite low in carbs. However, milk is, by definition, a dense source of energy for growth of young mammals. HWC promotes weight gain, while butter is somewhat exempt because it is mostly fat. Dairy is one of the top allergans and can cause IBS, sinus problems, bloating, rashes, etc.

That being said, some folks do okay with HWC. Every body is different. It's always a good experiment to consume it for a month then avoid it for the next month. And see how you feel.

Coconut oil does have a neutral taste.

You can buy light olive oil, which is not reduced calorie like "light" would seem, but has less flavor than other olive oil.


I haven't tried avocado oil, but the avocado itself is a good thing to eat...keeps you regular.

I do just fine with HWC. Other than the "slowed" digestion with cheese, I get no side effects with any dairy. As for the weight gain I don't usually consume large quantities of cream. It may be a tablespoon or so with my coffee. I DO NOT use commercial creamers as they contain many ingredients which have no business in my coffee as far as I am concerned. I do use the cream in a couple of other dishes. One would be a "cream" type soup such as cream of mushroom. The other would be in a "Steak au Poivre" which calls for a peppercorn/Cognac/Cream sauce.


I have a jar of coconut oil in my cupboard which I am going to start to use more often. I will see if the taste agrees with some of the dishes I like to make.

Hi gguerra,

Good to hear your body does well with HWC. (I wish mine did!) Coconut oil is great in smoothies too. It blends down pretty well.

A Cognac steak sauce sounds like what I need to make for Valentine's day. Thanks for the idea.

You only have 3 groups to get your calories from. Carb, Fat, Protein. If you cut both carbs and fat then you will be taking in WAY too much protein. Not healthy.

Cholesterol is vital, so vital if you don't eat enough your liver makes more. So if you eat more cholesterol your liver will slow its own production down.

Cholesterol doesn't cause heart disease.



Just concentrate on eliminating bad fats and get your good fats from good sources. Avacado, Coconut, Olive oil (real olive oil, not the fake stuff that litters most grocery shelves) and real butter. Select good quality beef and choose fattier cuts. Roasts, Brisket, Ribeye, 80/20 hamburger meat. Fatty fish like tuna (fresh). And of course pork.
