Chickpeas are kind of fun to eat...pop one in, peel the skin off, bite it so it breaks in half...I don't know... I can't just toss it in and chew it up, anyone else like that?
I don't know that I'd eat chickpeas right out of the can, but I like roasted chickpeas a lot. Toss them with a bit of olive oil and chili powder (or curry powder or whatever), spread on a cookie sheet and roast at 400 for 35 mins.

I've made roasted ones too, but I love them out of the can. I usually put them in a tupperware and in the fridge since I prefer them cold.

I also love hummus or white bean dip (made with cannelli beans).

How about black bean and corn salad? So easy and very filling. Toss together...

2 cans black beans, drained and rinsed
1 can sweet corn, drained and rinsed
1-2 jalapeno peppers, seeded and diced
1 green pepper, diced
1 red pepper, diced
1/2 medium red onion, diced
1-2 avacados, diced
2 cloves garlic, minced
2 limes, juiced and zested
FRESH cilantro, to your liking
cayenne pepper, to your liking
cumin, to your liking
salt, to your liking

I don't measure any of the seasonings so I don't know what I normally put it. A little of this and a little of that...taste it and then keep going if I need to. You can find similar recipes online.

You can put this stuff in a tortilla, eat it with corn chips, put it over greens or eat it from the container with a spoon like I do
