Sort of like how you are starting it by including carrots in your short list of starchy vegetables. Once again, an example of someone not understanding that there are different types of carbs, and sugar is not starch, starch is not sugar, but both are "simple" carbs.
Carrots do HAVE starch. But not a lot, and they are considered a "low-starch" vegetable. They do, however, have a higher sugar content than many other root vegetables, and combined with the trace amount of starch, put them in a higher *carb* category than you'd want, if you were consuming a "low-carb" diet.
Low carb diets DO limit vegetables, because most vegetables are not low-carb. They don't *eliminate* vegetables - but they do limit them. If they aren't limiting them, then they are not low-carb diets. They might, however, be low-grain diets. Or low-starch diets.
This is why the whole low-carb thing is so confusing. Because so many people who promote it, have no idea what they're talking about.
