Had some hotdogs with chili and cheese - thought that would suffice as an early dinner - but ended up heating up the turkey tenderloins in the crockpot with salad, pinto beans and mashes potatoes.
Yesterday the Charger game was not on national TV (sniffle sniffle) so had to console myself in the kitchen.
I harvested most of my basil plant and made a big batch of pesto. Have 2 cups of that in the freezer for future meals, but I also marinated then slow-baked some chicken drumsticks in a mixture of pesto and chile-garlic paste. Served crisped spicy chicken on a bed of pesto-dressed rotini pasta salad with diced roma tomatoes, bell pepper, and plenty of parmesan.
Dessert was a made-up fruit crisp concoction to clean out the fruit bowl. I chopped up an overripe mango and two overripe plums, mixed them with cinnamon, brown sugar, and some leftover Irish oatmeal and liberally covered the top with sliced almonds. Baked in 2 small dishes until the top looked right. Surprisingly good.
More of the same for dinner tonight. Love an easy Monday dinner.
Last night my hubby grilled. He put porkchops in a marinade with beer, molasses, thyme, splenda, and I can't remember what else. When he grilled them he put his barbecue sauce on them. My SIL who says he doesn't generally like porkchops had at least seconds. Hubby also grilled pineapple and made his wonderful baked beans. I made coleslaw. My daughter made low-carb chocolate eclair dessert.
Yesterday we had fried chicken, baked beans, macaroni salad, slaw, apple salad, potato salad, raw veggie tray with dip, wedges of tomatoes and homemade wheat bread. Butterscotch brownies for dessert.
