We had leftovers tonight. Tomorrow (per son's request) we will be having meatloaf, homemade mashed potatoes, macaroni and cheese, green beans, corn bread and whatever else he wants!
One of those "off the top of my head" type of dinners. Couple of Italian sausages, zuke, red pepper, tin of butter beans, tin of diced Roma tomatoes, packet of baby spinach, some frozen peas, chicken stock, red wine, basil, S&P. Put it all together and made something, no idea what to call it ... like a ratatouille sorta dish? Was good. Hit the spot.
I made my good English beef and Yorkshire pudding with gravy last night; now, here it is lunchtime and all the leftovers are gone.
