I passed by my local Jack in the Box fast food restaurant and bought a fish sandwich combo, which included french fries and a small beverage. Not a bad deal for $2.99! I wanted to make sure I tried their fish sandwich because they only carry it during Lent. I missed out on it last year.

Today's cafeteria lunch (Wednesday) is a school-made beef and cheese burrito and rice pilaf. I'll be starting at 6:30 a.m. to "fill and fold".

I still have a red pepper stuffed with ground meat and some gravy in the fridge. Probably I'll just boil a potatoe or two.
Will prepare a pasta gratin w/ broccoli, mushrooms and chicken breast for tomorrow though.

Skipped the stuffed peppers since the pasta gratin was too good to resist. So it'll be pepper time for dinner

Cheese quesadilla with the works: sour cream, guacamole, and sauted onions. It was so good!
