Yesterday I made tacos using Hormel chili (no beans)...with the lettuce and tomato and hot sauce and cheese....really good & cheap (although not my absolute favorite!)....
I wonder...can I make turkey tacos using sliced turkey from the deli (?), or do I need fresh chunky roasted turkey? Hmmm.........
Last night we had Shake-N-Bake Country style Loin Pork ribs. Moist and delicious!

Being a blond and a woman I reserve the right to change my mind--many times if necessary! Decided since it is wet and cloudy I would make swiss steak instead of chicken fried steak tonight. I will still have the mashed potatoes but no corn and green beans instead. I started the swiss steaks in my Dutch Oven and it is already cooking making the house smell so good! Yummy!

Thank you for the suggestion! I am going to pass this on to my husband. He makes tacos for him and the kids. Would you believe I've never had a taco? LOL I just don't like the way they look or smell! But I know my husband will do this! Thanks Debsi!

Tacos would be an excellent option.

Also - beef burgandy, beef paprika, beef stroganoff, beef w/broccoli stir fry would all be good. Depends on what other ingredients you have on hand.

Default Braised Filet Mignon Medallions

This is very easy to put together and takes hardly and time standing over the stove because most of the cooking is done over low heat over a few hours. One in the oven you don't need to check it, leave it covered and remove it after two hours. This serves two. You don't have to use Pinot Noir wine, any good red or burgundy wine will do. Just remember to use a wine that you would drink not a nasty cooking wine.

Braised Filet Mignon Medallions

6 Filet Mignon Medallions cut about 1/2" thick
2 Cups Francis Coppola Pinot Noir wine
1/2 Onion slivered
8oz Sliced mushrooms
4 tbs butter
1 10 1/2oz can brown gravy
4oz Au Jus Sauce
Salt and pepper to taste.

Place the medallions in a zip lock bag along with the wine and marinate four hours.
In a heavy bottom sauce pan saute onion and mushroom in butter until browned.
Remove onion and mushroom from pan and set aside.
Brown medallions on both sides.
Remove medallions from pan and set aside.
Return onion and mushrooms to pan along brown gravy, au jus sauce, wine from the marinate and salt and pepper.
Mix well and return medallions to pan making sure to cover with gravy.
Cover pan and place in an oven heated to 250% and cook two hours.
Remove from oven and serve with a vegetable such as saute spinach with garlic and Parmesan cheese.
