Throughout the year I package up leftovers that I know will freeze well...I intentionally don't label them with anything but the date so that it will be a surprise.
When I don't feel like cooking I pull out the oldest package and thaw it....tonight it will be whatever is pulled out....plus sliced tomatoes and a fruit salad.
Baked herb chicken breast with scalloped potatoes and summer squash with yummy salsa on it and cut up watermelon! All done, dishes loaded in the dishwasher and now it's time for me to relax--yes!
