I am skipping the Easter left overs until tomorrow night. We are having chicken breasts, pasta, kale and maybe asparagus.

I have an invite to eat with a local CD friend. Payment for setting up her new computer. Have no idea what her mom is cooking but I know there is roasted chicken in the works and I dropped a hint for oven roasted potatoes.

I hope everyone had a great Easter. We BBQ up a storm yesterday. Ribs, Chicken, venison sausage, tamales, corn.....

Tons of leftovers but dunno if I want leftovers or if I wanna cook the meat I have marinating.

Today I am making a homemade from scratch pasta sauce with roasted red & poblano peppers (for a little sweet & spicy) and fresh majoram.

Tonight that sauce will go over pan fried eggplant, topped with gruyre cheese and broiled to melt the cheese.

I'm not sure what I'll serve it with. Maybe a simple arugula salad and some roasted green beans.

Leftover lamb, mashed potatoes, green bean casserole, and gravy from yesterday. We have two perfect platefuls just waiting to be warmed up. Strawberry shortcake for dessert.
