Out of the 15 years I have put into restaurant work, I have been employed by 4 pizza joints across three different states (MidWest, New England, Northeast). And of course their is the pizza from my home state (California).

In my opinion, the best pizza is the one that is simple. I am not talking about crust, sauce, cheese, and one topping, although that is good, too. I am talking about a very thin veneer of sauce, preferably bianca, and a few toppings spread sparingly on top, including very little cheese. So little cheese that it might as well not be there.

That might sound too basic by American standards, but it allows you to taste how each item contributes to the overall taste instead of "flaws" being hid by excess[ive] sauce and/or cheese. If done right, it is really, really good.

I never understood the typical American-style of dumping a bunch of cheese on top or piling on toppings a mile high.

As far as American styles are concerned, I like the American Sicilian pizza found around Boston or just a basic thin crust (er, "normal" crust) one-topping, cheese, and red sauce slice.

I have enjoyed pizzas from all parts of the country and Chicago style is my favorite, hands down.

Italian Pizza. By that I mean authentic real Italian Pizza in Italy. Wood oven, thin crust, intensely flavoured "passata" type tomato base, a little torn Mozzarella di Bufala and maybe a sprinkle of herbs like thyme and rosemary or a little torn basil. That's it. Less is more.


I cannot stand what passes for "Pizzas" in most places with lots of cheap crappy ingredients piled high, fake mozarella ( some even use cheddar!!!), and lots of fatty greasy meats like pepperoni or bizarre concoctions like Pineapple and Ham. Blehhhhhhhhhhhhh ! The stuff people put on their "pizzas" makes me queasy.

The vast majority of "Pizza" chains and so called "Pizza" restaurant would not know a decent "Pizza" if it bit them in the proverbial derriere.

Um, my thoughts on this is any pizza is good, but I prefer the thick crust. Chicago pizza beats it all!

There is no best style of pizza.
Any pizza that tastes good to you is a good pizza.
Pizza can be as decadent or as healthy as you want it to be.
Does that make pizza the perfect food?

I do agree that too much cheese tends to ruin a pizza. We always ask for very light cheese.

My favorite Chicago pizza is Gino's East. Second would be Uno/Due.
