For the peach cobbler do you just sprinkle the cake mix over the peaches and bake? I used to make a dump cake with pineapple and cherry pie filling, then sprinkle the cake mix and put some pats of butter on top as well as some pecans and that was sooooo goood!
This works really well and tastes great. At this time of year fresh fruits are available too. There is so much you can do with cake mix.

Also if you want to make it chocolate just add 3T of cocoa. Not for the cobbler.

I'll bet you can make the batter thick and add jalapeno pepper bits and deep fry it for hushpuppies.

There are a lot of cookie recipes that use boxed cake mix versus measuring out the flour, baking powder/soda, other dry ingredients. They're really easy, and can be made using any flavor of cake mix. I made some once using lemon cake mix, and while they were easy, they were of course super artificial-flavoring-y tasting, as is anything with artificial flavoring. I like cookies that taste like "real" ingredients much better, but they'd work for a nondiscriminating crowd, like a kids' birthday party or something.

I recently saw one on pinterest that used only boxed cake mix, two eggs, and a tub of Cool Whip as the batter ingredients...which sounded sick to me, but would be very easy.

Dump cakes are made with mixes, but do not look ot taste like traditional cakes. Google for various versions of these recipes.
